Bare Honey is a small boutique beekeeping business, located in the hills north east of Perth.
The hives are typically located within or adjacent to bushland such as Jarrah, Marri, Wondoo, other eucalyptus trees and a range of native shrubs and flowers. Occassionally some hives are located on our 5 acre block at Bullsbrook.
As a premium honey, flavour, colour and consistency will vary throughout the flowering season. Our honey is harvested after manual inspection, cold processed and then lovingly gravity strained to retain all the goodness. This takes longer than factory processing (via heating and high-pressure filtering), however the quality of the product speaks for itself and makes it all worthwhile!
We enjoy keeping bees and sharing knowledge of bees and the role they play in our environment with those interested. Speaking from experience, there is something very therapeutic watching the bees hard at work in our backyard. Of course, our garden benefits as do other surounding gardens - with increased yield and less malformed fruit.
When honey is heated, its delicate aromas, yeast and enzymes which are responsible for activating vitamins and minerals in the body system are partially destroyed.
Like salt, real honey (raw and untreated) never goes off - it will last forever. Particularly in cooler weather, honey can crystallise (or candy). Some honeys crystallise faster than others. Highly processed honey which has been subject to extremes of heat and then highly filtered will rarely crystallise.
Crystallised honey has been found in Egyptian tombs perfectly edible after thousands of years. As honey does not expire. we use a “Packaged Date” on our products. This is to meet consumer expectations of finding a date on foods and for quality control/traceability.
Raw unprocessed honey is an alkaline-forming food, this type of honey contains ingredients similar to those found in some fruits, which become alkaline in the digestive system. It doesn't ferment in the stomach and it can be used to counteract acid indigestion. When mixed with ginger and lemon juices, it effectively relieves nausea and supplies energy.
Raw foodists love honey for its exceptional nutritional value and its amylase, an enzyme concentrated in flower pollen which helps predigest starchy foods like breads.
